SECRET INGREDIENT SCOTCH EGGS
Many people say they have recipes where you can’t tell there is liver and always the taste is there!? Not this time! I promise you will only get the taste of well seasoned beef and beautiful egg with every bite! These are great to make ahead in a big batch too, easy to double this one!
INGREDIENTS:
4 eggs (hard boiled, pro tip go slightly under your usual time if you want a creamier yolk!)
12oz ground beef
4oz liver (chopped/minced, pro tip this is easier to mince if it is frozen to start!)
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp rosemary
1/2 tsp paprika
RECIPE STEPS:
Pre-heat oven to 380 degrees.
Peel your hard boiled eggs and set aside.
Place beef, liver and seasoning in a bowl and mix well. Get in there with your hand!
Separate meat mixture into 4 equal portions
Create a flat patty with the meat mixture. Doing this on parchment paper or plastic wrap helps you get an even patty.
Place the egg in the center of the patty. Using the paper as a guide, wrap the meat mixture around the egg until it’s fully covered. You want no cracks or holes. The meat is very forgiving here, so don’t stress out if it takes some work. Channel your inner child playing with Play-Doh.
Place your wrapped egg on a non stick or parchment lined sheet. Bake at 380 for 20 mins and enjoy!
